Roasted Cabbage with Sage & Hemp Seed Pesto

Serves 2-4

Ingredients

1 Pointed Cabbage
1 tsp Sunflower Oil
10-15 Sage Leaves
2 tbsp Hemp Seeds
2 tbsp Extra Virgin Olive Oil
2 tbsp Nutritional Yeast
1 tbsp Lemon Juice
1 Garlic Clove
1 tsp Salt

Variations

If you can't source hemp seeds, pine nuts are great.
Herbs such dill, parsley or rosemary work well with cabbage and would be delicious in place of sage.

Method

  1. Heat a frying pan to medium. Add the hemp seeds & toast gently for 2-3 mins, using a utensil to move the seeds regularly to ensure they do not burn.
  2. Put the hemp seeds, olive oil, sage leaves, nutritional yeast, lemon juice, garlic & salt into a blender and blend until smooth. Add a little water or oil to loosen if required.
  3. Trim the hard stalk from the cabbage & cut into quarters lengthwise.
  4. Rub the cabbage lightly with a sunflower oil. Heat a frying pan or skillet to medium. Sear the cabbage by placing each piece cut-side down in the frying pan & pressing firmly to ensure it has good contact. After 3-4 minutes turn the cabbage & repeat the process so the other cut edge is seared.
  5. Turn off the heat. Move each slice of cabbage to a roasting tray. Rub generously with the pesto & roast for 20 minutes. Serve whole hot, straight from the oven.


Delicious topped with some extra toasted hemp seeds, fried sage & chilli flakes.
